Overnight oats have been my go-to breakfast for the longest time. I love having a quick, easy, healthy meal ready for when I wake up or to have on the go to work.
These Blueberry Overnight Oats are perfect for meal prep and making in large weekly batches. They’re also effortless while having an amazing taste and texture.
Oats are a great source of protein, rich in fibre and are also a nutrient-dense food that helps keeps you full for longer. You really only need 6 main ingredients for this recipe but feel free to top them with any fruit, nuts or seeds you have handy.
Serves 2
5 minutes, left overnight
1 cup rolled oats
2 tbsp chia seeds
2 tbsp shredded coconut, more for topping
2 cups plant milk
1 cup frozen blueberries
1/2 cup fresh blueberries
1/2 cup yogurt, I use soy
Add the rolled oats, chia seeds and shredded coconut to a bowl and mix together.
Add the milk and frozen blueberries to a blender and blend until smooth.
Pour the blueberry milk into the oats and mix well. Cover and leave in the fridge overnight.
The following day add the yogurt and spread it over the oats. Top with extra shredded coconut and fresh blueberries.
